About the Wine:
This wine was sourced from one of our Prestige Cellar holders with a high level of bottle provenance. A benchmark expression of Chablis terroir from one of the region’s most revered producers.
Tasting Profile
This Premier Cru opens with piercing aromas of citrus zest, struck flint, and sea breeze, layered with hints of white floral notes and saline minerality. The palate delivers crystalline purity—think grapefruit pith, green pear, and oyster shell—wrapped in a glossy, textural mid-palate that balances richness with racy acidity. The finish is laser-sharp, marked by chalky persistence and a saline backbone, showcasing its Kimmeridgian limestone origins.
Vineyard & Winemaking
Sourced from old vines (40+ years) in the La Forest climat—a sun-drenched Premier Cru site with Grand Cru-level depth—this wine undergoes traditional fermentation and aging in Nevers oak barrels (some over 30 years old). Dauvissat’s low-yield, organic practices yield wines of structural precision and decade-long aging potential
Drinking Window
While accessible now with its vibrant fruit core, this will evolve beautifully over 10–15 years. Serve chilled (11–13°C) alongside shellfish, grilled sea bass, or goat cheese.
